CAROB BANANA & COCONUT BROWNIES

A moreish treat made with the goodness of carob. The result- dense, gooey and very low in processed sugar and a healthier brownie!

 

CAROB BANANA & COCONUT BROWNIES

1 cup plain flour
200g roasted carob powder
¼ cup brown sugar
2 tsp cinnamon
½ tsp cloves
1tsp baking soda
¼ tsp salt
 
2 eggs
2 tbs vanilla essence
3 ripe bananas- mashed
¼ cup olive oil
¾ cup carob syrup

1 cup shredded coconut

  1. Pre-heat the oven at 160 degrees celsius (fan forced)
  2. Grease and line sides and bottom of an 8” loose bottom square tin
  3. In a bowl combine all dry ingredients
  4. In a seperate bowl combine eggs, mashed bananas, olive oil, carob syrup and vanilla
  5. Pour into dry ingredients. Add coconut and stir until combined.
  6. Pour into prepared tin and Bake for 25-30 mins
  7. Cool completely before removing from tin. Cut into rectangles.
  8. Dust with icing sugar (optional) .Will keep in air tight container for up to 4 days
