ANZAC BISCUITS

Makes 15 large biscuits

1 cup plain flour
1 cup Rolled Oats
1 cup Desiccated Coconut
½ cup Caster Sugar
125g butter
2 tablespoons Golden Syrup
½ teaspoon Bicarbonate of Soda
2 Tablespoons Boiling Water
  1. Pre-heat oven to 160 degrees Celsius (fan-forced)
  2. In a large bowl combine plain flour, rolled oats, coconut and sugar.
  3. In a saucepan melt the butter and golden syrup until all combined. Take off stove.
  4. In a small bowl combine the bi-carb soda and boiling water.
  5. Add water mixture to the butter mixture. It will froth up.
  6. Add to dry ingredients and stir until all combined.
  7. Take tablespoons of the mixture and roll into a ball – put on trays lined with baking paper and allow room for spreading.
  8. Press the biscuits down firmly to flatten using the back of a spatula.
  9. Bake for 10 -15 minutes until golden brown.
  10. As soon as you take out of the oven, press the biscuits down firmly to flatten again, using the back of a spatula.
  11. Place on a cake cooling rack to cool.
