JESSICA'S STRAWBERRY CRUMBLE SLICE

A great way to incorporate fresh strawberries into a delicious treat!

JESSICA'S STRAWBERRY CRUMBLE SLICE

500g strawberries, stems removed, quartered
½ cup strawberry jam
¼ cup corn flour
50g almonds, chopped coarsely
2-3 tsp vanilla essence
2 cups plain flour
2 cups rolled oats
250g unsalted butter, softened
¾ cup caster sugar
1 egg
¼ cup water
1 tsp cinnamon
½  tsp salt
½ baking soda
  1. Pre-heat oven to 180 degrees Celsius (fan forced)
  2. Line a 27cm x 17cm slice tin with baking paper, making sure sides over hang
  3. Beat butter and caster sugar until creamy. Add egg and water and beat until all combined.
  4. Add flour, oats, salt, baking soda and cinnamon. Stir until all combined.
  5. Press half of this mixture into the bottom of slice pan. Prick base with a fork and bake in oven for 15 minutes or until golden brown.
  6. Combine strawberries, jam, corn flour, almonds and vanilla
  7. Spread strawberry mixture evenly over the cooled base.
  8. Crumble pieces of remaining dough over the strawberry mixture.
  9. Bake for 25 minutes.
  10. Cool completely before cutting into slices. Store in airtight container in the fridge.

Serve with double cream, custard or eat on its own

NOTE: Omit almonds for a nut free treat!
