MOIST BANANA LOAF WITH CHIA AND PUMPKIN SEEDS

1 ½ cups SR flour
125g butter
2 eggs
¾ cup sugar
3 very ripe bananas, mashed
½ tsp bi-carb soda
¼ cup greek yogurt
2 tbs pumpkin seeds
2 tbs chia seeds
  1. Pre heat oven at 170 degrees celsius (fan forced)
  2. Grease a 12cm x 22cm loaf tin and line base and sides with baking paper.
  3. Beat sugar and butter until creamed then beat in eggs.
  4. Add flour, bicarb soda, mashed banana and yogurt. Stir until all combined.
  5. Scatter the top with pumpkin and chia seeds and bake in oven for 30-35 minutes.
