JESSICA'S FULL OF GOODNESS NO BAKE BROWNIES

These brownies are everything you want your brownie to be....dense, chocolately, healthy, sugar free ......Guilt Free!!!

JESSICA'S FULL OF GOODNESS NO BAKE BROWNIES

Makes 24 pieces

2 cups pitted dates
2 cups boiling water
1 cup pistachios or almonds
1/2 cup cocoa powder
1/2 cup carob powder
4 tbs water
1 cup chia seeds
2 tsp vanilla essence
2 tsp ginger powder
2 tsp cinnamon
 
  1. In a bowl, soften the dates by covering with boiling water. Set aside for 5 minutes or until softened. Drain the water away.
  2. In a food processor, process nuts until coarse crumbs. Add dates, cocoa and carob powder, chia seeds, vanilla and spices and 4 tablespoons water. Process untill all combined.
  3. Line a 27cm x 17cm slice pan with baking paper so that sides overhang. Press brownie mixture into pan using hands.
  4. Place in fridge until firm. Cut into pieces and dust with extra cocoa or carob before serving.

This brownie will last in fridge for up to a week.

Nuts can be replaced with seeds, toasted museli or coconut.
