Perfect on your Cheese Board for your next party or a delicious snack to eat on there own! Which ever you choose, these delicious cheesy morsels are sure to impress!


Makes approx. 20

170g SR flour

40g unsalted butter

40g sharp cheddar cheese, grated

10g pecorino cheese, grated

1/3 cup cold water

1 tbs pepitas

1 tsp paprika

¼ tsp salt

Extra grated pecorino

  1. Pre heat oven to 200°c (fan forced)
  2. In a food processor, pulse SR flour, butter, cheddar, pecorino, salt, paprika and pepitas until the mixture resembles coarse crumbs.
  3. Add water in a slow stream and pulse until the dough forms a ball.
  4. On a lightly floured surface, knead dough until it comes together and lightly flour your rolling pin. Roll the dough to about ¼ cm thick into a rectangular shape.  You may need to use extra flour when rolling to prevent any sticking.
  5. Use a sharp knife cut the dough into strips 22cm long by 1 ½ cm wide.
  6. Transfer gently twist the strips and lay on a baking tray lined with baking paper. Don’t worry if the twists sag or break slightly. Just use your fingers to mend by pressing the dough back together. They are rustic cheese twists after all!
  7. Scatter extra pecrino cheese over the top of the twists and bake in oven for about 12-15 minutes or until golden.
  8. Cool completely before serving.
