An alternative to the traditional sponge Lamington using Messy Jessy Rich Chocolate Mud Cake Mix!

MESSY JESSY CHOCOLATE MUD 'LAMINGTON' CUPCAKES

Makes 12 - 14 cupcakes

Cupcakes

1 pkt Messy Jessy Rich Chocolate Mud Cake Mix
350ml water
190g unsalted butter
1 extra large egg
 
Frosting/ Decorations
 
Messy Jessy Frosting Mix (included- sachet 2)
140g unsalted butter- softened
30ml (1 1/2 tbs) water
2 cups shredded coconut
Australian Toothpick Flags
 
METHOD
 
  1. Line a cupcake tray with patty cases- we used blue to go with the Australia Day theme
  2. Prepare cake mix as directed. Pour into cupcake cases- about 3/4 full
  3. Bake at 150 C fan-forced for 15-18 minutes. Cool on wire rack.
  4. Make frosting according to packet directions.
  5. Spread frosting evenly over each cupcake. Sprinkly generously with shredded coconut.
  6. Decorate with Australian toothpick flags and serve!
